RECIPE:
2 cans Coconut Milk
1/2 Avocado
4 tsp Matcha Powder
3 tbsp Chia Seeds
6 drops Stevia
Open one can of coconut milk and take the first 4 tablespoons off the top. Put it in a bowl and set aside for later. Add the rest of the can and the other can to a blender. Add 1/2 an avocado and 4 tsp matcha powder and blend.
Pour mixture into a bowl and add 3 tbsp chia seeds. Cover bowl with plastic and place in the fridge. Stir after 30 minutes and place back in fridge. Let sit overnight or for at least 2 1/2 hours.
For the whipped cream, add 6 drops of Stevia and whip until fluffy. Serve matcha chia seed pudding with a dollop of whipped cream and enjoy.
